Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the top of the make table cooler across from the cash register cut tomatoes (44F - Cold Holding). Per operator the tomatoes have been in the cooler less than four hours. Operator adjusted the temperature of the cooler.

No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Operator unable to provide proof of training for any employees.
Warning
In-use ice scoop stored on soiled surface between uses. The ice scoop for the ice machine is stored on a metal shelf that has chipped paint and rust. Operator moved the ice scoop to the triple sink and placed a pan for the storage of the ice scoop. After 20 minutes cut tomatoes 43F cold holding.

Fly sticky tape hanging over food/food preparation area/food-contact equipment. There are fly sticky tubes hanging above single service items. Operator moved the sticky tubes.

Cutting board has cut marks and is no longer cleanable. There are multiple cutting boards that are deeply stained with grooves and are no longer cleanable.
In-use ice scoop stored on soiled surface between uses. The ice scoops at the ice machine are stored on a dirty drain mat. Operator washed, rinsed and sanitized the ice scoops.
