Verify on Florida DBPR →Stop Sale issued due to food not being in a wholesome, sound condition. Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In the under counter cooler in the sushi station there is one 8 ounce portion of commercially reduced oxygen packaged tuna that is marked to be removed from packaging before thawing still in the reduced oxygen package.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the top of the make table cooler in front of the deep fryer lobster (45F - Cold Holding); shrimp (46F - Cold Holding). Operator states that shrimp and lobster have been in the cooler less than 4 hours, operator iced the shrimp and lobster.
Establishment advertised a specific fish on the menu/menu board but served another type of fish. On the menu escolar is listed as, escolar (white Tuna).8

Food stored on floor. There are multiple cases of food stored on the floor in the walk in freezer.
Ice buildup in reach-in freezer and/or walk-in freezer. There is a buildup of ice on the shelving by the door in the walk in freezer.
In-use ice scoop stored on soiled surface between uses. At the bar the ice scoop is stored on the drain rack of the drink fountain. Operator moved the ice scoop to proper storage.
