Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the alto shaam half chickens (93F - Hot Holding). Per operator the alto shaam was turned off two hours prior to prevent over heating the chicken. Operation turned the alto shaam back on to reheat the chicken.
